Avial

Ingredients:

  • Beans - 4 -5
  • Carrot - 1
  • Yam - a small piece
  • Brinjal - 3-4
  • Plaintain - 1/2
  • Drum stick - 1/2
  • Cucumber - 1/2
  • Sour Mango - 1/2
  • Coconut grated - 1 cup
  • Green chillies - 4
  • Turmeric powder - a pinch
  • Cumin seed - 1 tsp
  • Shallot - 1
  • Curd - 1 cup
  • Salt to taste
  • Coconut oil
  • Curry leaves.

Preparation:

  1. Cut all the vegetables length wise. In a pressure pan, heat coconut oil and add all the vegetables. Mix well and cook them.
  2. Grind coconut, turmeric powder, cumin seeds, shallot and green chillies to a coarse paste.
  3. Add this paste to the cooked vegetables and add curd and salt and mix well and cook till all the moisture evaporates.
  4. Put off the stove and pour coconut oil and add curry leaves.
