Baigara Baigan

Ingredients :

Eggplant (Brinjal) - 5nos
  • Peanuts – 1/2 cup
  • Sesame seeds – 1/4 cup
  • Fresh Coconut – 1/4 cup
  • Chilly powder – 2 tsp
  • Garam masala powder - 1/2 tsp
  • Coriander powder - 1tsp
  • Ginger-garlic paste - 1 tsp
  • Turmeric powder- 1/4 tsp
  • Mustard seeds - 1/4tsp
  • Cumin seeds - 1/2tsp
  • Sliced Onions - 1no
  • Sliced Green Chillies – 4 nos
  • Chopped Tomatoes – 1 nos
  • Tamarind paste - 4 tsp
  • Water - as required
  • Salt - to taste
  • Oil – 2 Tsp
  • Curry Leaves
  • Chopped Coriander leaves
  • Preparation :

    1. Roast peanuts and sesame seeds separately. Grind it along with coconut into a fine paste.
    2. Add garam masala powder, salt, chilly powder, coriander powder and ginger-garlic paste to the above mixture and mix well.
    3. Make slits on the eggplant and stuff it with the ground paste and keep aside.
    4. Heat oil in a pan. Splutter mustard seeds, add cumin seeds and curry leaves.
    5. Add onions and green chillies and saute until they turn brown.
    6. Add chopped tomatoes and saute till oil separates.
    7. Add the stuffed eggplant and mix well. Add the tamarind paste, water and salt Simmer till gravy thickens and the eggplant is tender. Garnish with chopped coriander.
