Carrot Basundhi

Ingredients:

  • Carrot - 2
  • Milk - 1 ltr
  • Bread slices - 2
  • Ghee - 3 Tbsp
  • Sugar - 8 - 10 Tbsp
  • Cashews
  • Raisins

Preparation:

  1. Shred the carrot. Remove the crust of the bread and make small pieces.
  2. Heat ghee in a frying pan and add the carrot and cook for 2-3 minutes for a fine aroma. Don't over cook. Keep it aside and let it to cool.
  3. Now add i cup of milk to the carrot and give it a boil for 3-5 minutes.
  4. Add the remaining milk and keep stirring till the milk condenses.
  5. Add sugar and stir till the sugar dissolves. Add the bread pieces and cook till the bread is cooked.
  6. Refrigerate this for 4-5 hours.
  7. Garnish with ghee fried cashews and raisins while serving.
