Sweet Corn Vegetable Soup

Ingredients:

  • Cooked sweet corn - 1 cup
  • Spring onion - 2
  • Beans - 6-7
  • Carrot -1
  • Mushroom - 3
  • White pepper - 1/2 tsp
  • Corn flour - 2 Tbsp
  • Sugar - 1/2 tsp
  • Ghee - 2 Tbsp
  • Salt to taste

Preparation:

  1. Chop the vegetables finely and half cook them and keep aside.
  2. Heat ghee in a pan and add onion and saute. Add corn and a cup of water.
  3. Add sugar, salt and pepper. Dissolve the corn flour in water and add it. Bring to a boil.
  4. Before serving, mix the vegetables along with the soup and mix well and garnish with mint leaves.
