Ingredients:
- Egg plant (Brinjal) - 8
- Onion - 1
- Tomato-1
- Coconut grated - 1/2 cup
- Garam masala powder - 1 tsp
- Garlic pods - 2
- Chilly powder - 1 tsp
- Tamarind pulp - 1 tsp
- Jaggery - a small lemon size
- Salt to taste
- Oil - 2 Tbsp
- Turmeric powder - 1/2 tsp
- Curry leaves
- Mustard seeds - 1 tsp
- Urad dal - 1 tsp
- Red chilly - 3
Preparation:
- Cross cut the egg plant. Make a paste of coconut.
- Heat oil in a frying pan and splutter mustard seeds and add urad dal and red chilly.
- Add chopped onion and fry till it is soft and add garlic, chopped tomatoes and whole egg plant and cook for 5 minutes.
- Add turmeric powder, chilly powder and garam masala powder and salt and cook till the brinjal is cooked.
- Add the coconut paste and cook for few more minutes.
- Add tamarind pulp and jaggery and cook till a semi liquid consistency is reached. Garnish with curry leaves.
