Thumbagayi Palya

Ingredients:

  • Egg plant (Brinjal) - 8
  • Onion - 1
  • Tomato-1
  • Coconut grated - 1/2 cup
  • Garam masala powder - 1 tsp
  • Garlic pods - 2
  • Chilly powder - 1 tsp
  • Tamarind pulp - 1 tsp
  • Jaggery - a small lemon size
  • Salt to taste
  • Oil - 2 Tbsp
  • Turmeric powder - 1/2 tsp
  • Curry leaves
  • Mustard seeds - 1 tsp
  • Urad dal - 1 tsp
  • Red chilly - 3

Preparation:

  1. Cross cut the egg plant. Make a paste of coconut.
  2. Heat oil in a frying pan and splutter mustard seeds and add urad dal and red chilly.
  3. Add chopped onion and fry till it is soft and add garlic, chopped tomatoes and whole egg plant and cook for 5 minutes.
  4. Add turmeric powder, chilly powder and garam masala powder and salt and cook till the brinjal is cooked.
  5. Add the coconut paste and cook for few more minutes.
  6. Add tamarind pulp and jaggery and cook till a semi liquid consistency is reached. Garnish with curry leaves.
