Vatha Kuzhambu

Ingredients:

  • Onion – 2
  • Tomato - 1
  • Garlic pods – 4
  • Tamarind – A small lemon sized ball
  • Sambar powder – 2 Tbsp
  • Turmeric powder – 1/4 tsp
  • Salt to taste
  • Gingely Oil - 2 Tbsp
  • Fenugreek seed – 1 tsp
  • Curry leaves – 1 sprig
  • Mustard seeds – 1 tsp
  • Jaggery – 1 tsp

Preparation:

  1. Soak the tamarind in water and extract the tamarind pulp.
  2. Heat oil in a frying pan splutter mustard seeds and add curry leaves and fenugreek seeds.
  3. Now add garlic and onions and fry till cooked. Add chopped tomato and fry till cooked.
  4. Add the tamarind pulp, sambar powder, turmeric powder , salt and cook to a thick consistency. Add the jaggery and cook for a minute.

    If needed u can add cooked vegetables along with the tamarind pulp.
