Vegetable Kurma

Ingredients:

  • Cooked vegetables - 1/2 cup (beans, carrot, potato, peas)
  • Onion - 2
  • Tomato -1
  • Oil
  • Salt to taste
  • Bay leaf - 1
  • Cardamom - 2
  • Cloves -1
  • To grind
  • Coconut grated - 1/2 cup
  • Cinnamon - 1
  • Ginger garlic paste - 2 tsp
  • Poppy seeds - 1 tsp
  • Aniseed - 1 tsp

Preparation:

  1. Grind the ingredients given for grinding to a fine paste.
  2. Heat oil in a pan and add cloves, bay leaf and cardamom.
  3. Add chopped onion and saute. Add tomatoes and cook till they turn soft.
  4. Add the cooked vegetables and 1/2 cup water and salt and mix well and leave to boil.
  5. Add the ground paste and cook for 5 minutes.
  6. Remove from heat when the gravy gets thick.
  7. Garnish with coriander leaves.
