Ingredients:
- Brinjal or Egg plant - 5
- Green chillies -5
- Onion - 1
- Curry leaves
- Grated Coconut - 1/4 cup
- Turmeric powder - 1/2 tsp
- Tamarind pulp - 1/4 cup
- Asaofoetida powder - 1/4 tsp
- Urad dal - 1 tsp
- Mustard seeds - 1 tsp
- Salt to taste
- Oil
Preparation:
- Cook the brinjal till soft. Grind coconut, tamarind pulp and brinjal to a smooth paste.
- Heat oil in a frying pan and splutter mustard seeds.
- Add asaofoetida powder, urad dal and fry.
- Add green chillies, curry leaves and onion.
- Now add the brinjal paste, salt, turmeric powder. Add water if needed. Mix well.
- Cook till a semi liquid consistency is reached.
