Brinjal Kotsu

Ingredients:

  • Brinjal or Egg plant - 5
  • Green chillies -5
  • Onion - 1
  • Curry leaves
  • Grated Coconut - 1/4 cup
  • Turmeric powder - 1/2 tsp
  • Tamarind pulp - 1/4 cup
  • Asaofoetida powder - 1/4 tsp
  • Urad dal - 1 tsp
  • Mustard seeds - 1 tsp
  • Salt to taste
  • Oil

Preparation:

  1. Cook the brinjal till soft. Grind coconut, tamarind pulp and brinjal to a smooth paste.
  2. Heat oil in a frying pan and splutter mustard seeds.
  3. Add asaofoetida powder, urad dal and fry.
  4. Add green chillies, curry leaves and onion.
  5. Now add the brinjal paste, salt, turmeric powder. Add water if needed. Mix well.
  6. Cook till a semi liquid consistency is reached.
