Inchi (Ginger) Curry

Ingredients:

  • Ginger - 100 gms
  • Chilly powder - 1 tsp
  • Coriander powder - 1/2 tsp
  • Turmeric powder - a pinch
  • Salt to taste
  • Tamarind pulp - 2 Tbsp
  • Jaggery - 1 tsp
  • Gingely oil

Preparation:

  1. Shred the ginger. Heat oil in a frying pan and fry the ginger to golden brown. Let it to cool and powder it.
  2. Heat gingely oil in a frying pan and splutter mustard. Add the tamarind pulp and salt and let to boil.
  3. Now add chilly powder, coriander powder and turmeric powder. Boil till a semi liquid consistency is reached. Add the powdered ginger and jaggery and give a boil.
