Ingredients:
- Urad dal - 1 cup
- Idly rice - 4 cups
- Fenugreek seed - 1 tsp
- Salt to taste
For masala
- Potato - 3
- Onion - 1
- Green chillies -3
- Turmeric powder - 1/2 tsp
- Bengal gram - 1 tsp
- Mustard seeds - 1 tsp
- Curry leaves
- Salt to taste
- Oil
Preparation:
- Soak urad dal for 15 minutes along with fenugreek seeds and soak rice for 2 hours.
- Grind them to a fine paste separately.
- Now mix them together to a batter consistency and add needed salt and set aside to ferment for about 24 hours.
- For the masala, heat oil in a pan and splutter mustard seeds and add curry leaves.
- Add bengal gram and chopped onion and fry them a little.
- Add green chillies. Now add smashed potatoes and turmeric powder and mix well. Sprinkle water if needed. Add salt. Cook for few minutes.
- Heat a tawa and spread the batter to a thin layer. Place the masala mix in the middle and roll the dosa. Pour oil around the dosa. Remove from heat when the batter is cooked and serve with chutney and sambar.
